Use 1-2 teaspoons of Diva Chocolates
grilling rubs per side, per cut of meat. Sprinkle it evenly on each side and rub it in. Wrap individual cuts in plastic wrap and refrigerate for at least 30 minutes.
To prepare your grill, first use a wire brush to clean it. Light coals or turn the gas setting to high to heat things up. When you're ready, turn the heat to medium and grill the meat to your liking (check for suitable internal heat temperatures to ensure safe cooking).
While grilling, spritz each cut with an olive oil spray or alcohol (wine or beer in a spray bottle works well) being very careful not to make contact between the oil or alcohol and the barbeque flames or heat source. We recommend not flipping often; let the meat cook on one side, then the other, in nearly equal time intervals. This will ensure even cooking and give you those pretty grill marks.
Once grilling is complete, plate the meat and cover in foil. Let the it rest for 3-5 minutes before serving to allow the flavors and juices to sink in. |
