Open-Face Cheese-Nib Sandwich
Warm cheese, rustic bread and chocolate … the only thing missing from this scrumptious dish is a glass of wine.

Ingredients:
  •  1 loaf  baked rustic bread (Olive, Rosemary, Italian, Sour Dough)
  •  8 ounces  goat cheese
  •  ¼ cup  nibs
  •  ¼ cup  pecans
  •  ¼ cup  Spanish olives
Instructions:
  1. Preheat oven to 350 degrees.
  2. Cut the bread into thick slices and set aside.
  3. Using a food processor, crush the nibs and pecans. Once finely chopped add in olives and continue to process until the olives are also in small pieces.
  4. Add the goat cheese to the nut and olive mixture and blend well.
  5. Spread cheese onto the bread and place it, cheese side up on a baking sheet.
  6. Place the baking sheet in the oven and toast until cheese is warm and begins to bubble, about 5 minutes.
